Do you know of any video tutorials, walkthroughs etc that you would suggest?  I like reading and watching, because I get different things from each.

No, I've never come across a methodical demo of the Poly Evolver's control panel.  Anu's Guide is the best resource available.  There are two videos demonstrating how to polychain a Mono Evolver Keyboard and an Evolver Desktop, but I doubt that's what interests you.
