I enjoyed reading "Power Tools for Synthesizer Programming"  by Jim T. Aikin a lot (https://www.amazon.com/Power-Tools-Synthesizer-Programming-Reference/dp/0879307730). I occasionally still browse through it as it has lots of nice modulation and patching suggestions.

There is of course also the amazing Sound on Sound archive at https://web.archive.org/web/20160403115835/http://www.soundonsound.com/sos/allsynthsecrets.htm (scroll all the way down to find the start of the series).
DAW-less and going down the Eurorack rabbit hole.

Have a look here: https://rhordijk.home.xs4all.nl/G2Pages/

Loads of info from a guy I know Rob who is a master. It uses the Nord G2 and you can download a G2 emulator/demo to work through it all here: http://www.nordkeyboards.com/downloads/legacy/nord-modular-g2
