 Can anyone recommend a good midi controller with enough knobs, switches, and sliders to handle all of the mophos parameters without menu diving?

Not even the Mopho Keyboard strictly meets that requirement. However, if you don't have a MIDI controller, an original goldenrod Mopho Keyboard could be a great choice (depending on how many keys you need). Well-built, nice-feeling keyboard, USB connectivity, a great sound engine when you need it. And they can often be found for $400 USD.
